Instructions
  1. Bring the milk to the boil in a saucepan, then lower the heat and add the squeezed lemon. Stir well until the milk curdles.
  2. Filter the milk and curds through a cloth or fine sieve.
  3. Keep the curds in the colander or cloth and leave to drain for 30 minutes.
  4. Add honey or maple syrup and blend vigorously until smooth.
  5. Place over medium heat and stir for 5 minutes, adding the ground cardamom, coarsely crushed almonds and pistachios.
  6. Leave to rest, roll out into a two- to three-centimeter-thick square and cut into smaller squares.
  7. Enjoy cold or lukewarm
