Contrary to what many people think, paprika comes from South America, not Africa or Asia.

Organic hot paprika is the powdered version of the mature sweet pepper. Once dried, the bell pepper(Capsicum annuum, of the Solanaceae family) is ground to give this fine, slightly pungent powder, unlike sweet or smoked paprika.

Originating in South and Central America, paprika was cultivated by the Aztecs and Mayans around ten thousand years ago. Like pepper in the Middle Ages, it also had an exchange value.

It was during the colonization of America in the early 16th century that paprika invaded Europe. Spain cultivated it and produced so much that other European countries called it Spanish pepper. It has to be said that, at the time, people were still convinced that the pepper plant was the origin of many spices: pipper, pimento, pimentia, pipali, peperi...

To differentiate this verbal imbroglio, botanists defined it as capsicum (generic name for chillies, in the Solanaceae family, which also includes tomatoes, tobacco and potatoes).

Crossing the South Seas

It soon crossed the South Seas and spread to Africa and India, so much so that Europeans were convinced that paprika came from India. It reached Japan in the early 17th century and was used in the composition of the famous Shichimi (7 Japanese spices).

Following Napoleon's continental blockade in the early 19th century, Hungary began to grow it extensively to replace pepper, which was in short supply because England could no longer export its own products and those of its Indian colonies. Goulash took on national importance.
