Dan always says to me, "This tea is simple: a pinch of lime blossom, one of vervain, one of lemongrass, a dash of peppermint and that's it! We add a few orange and lemon peels, and Dan agrees that it's good. A superb syrup in the mouth, sweetened or not, depending on your taste.
No added flavouring, only plants and fruit.
Digestive, restful, anti-stress and anti-inflammatory, this organic herbal tea has many virtues. Warm by the fire in winter, or cool in summer with still or sparkling water, it's a thirst-quenching delight. My buddy Dan used to pick lemon balm in the mountains, combining it with lime and verbena leaves gleaned from his mid-mountain escapades; he dried it all year round, so that when winter approached we knew that every time we visited the Mercantour we'd be entitled to this after-meal nectar.
