The cranberry is a plant that grows wild in the peat bogs of cold regions. Growing to around 30 cm in height, this hardy shrub produces small red berries: the kind we eat when dried. In France, it's also known as the North American lingonberry, but everyone calls it cranberry. Cranberries are to North America what prunes are to the south of France. Cranberries are rich in vitamin C and antioxidants.
A little history
Native to North America, the cranberry was highly prized by the Amerindians, who introduced it to the first British settlers. This little berry, a member of the Ericaceae family (like the blueberry), grows in peat bogs, among sphagnum mosses.
Its cultivation requires special conditions. Indeed, although the shrubs from which cranberries grow are small (around 30-35 cm tall), they are no less demanding: cool, rainy climate, clayey, sandy soil.
They are therefore mainly grown in North America / Canada.
Dried Cranberries, with their slightly tart flavor and intense red color, will add a touch of originality to your preparations.
Consumption
Add a touch of originality to your aperitifs (on a toothpick, alternate a small piece of sheep's cheese with a dried cranberry) or to your cheese platter.
Perfect as an accompaniment to meats (beef, pork, poultry...) or for sauces...
It adds a tangy note to sweet preparations such as desserts and pastries: mueslis, cakes, clafoutis, rice or semolina cakes, fruit or chocolate bars, fruit salad, ice cream, bread, etc. It goes divinely well with chocolate!
Finally, decorate your desserts with them.
Tip: Cranberries are extremely stable and tolerant of different culinary uses (as is, in purée, in sauce, cooked cold, cooked hot), so you'll be inspired to create new recipes!
Properties
Dried cranberries in cane juice or apple juice should be consumed in moderate quantities, due to their high energy content. It can be consumed occasionally or daily.
In this case, don't exceed 15g of dried cranberries (about 1 tablespoon): a few grams are enough! It's best to eat them regularly, but in small quantities. To slow down gycemia, cranberries are best consumed with meals, along with proteins or lipids (e.g. dairy products or a few drops of sunflower oil).

- anyone (children, teenagers, students, pregnant or breastfeeding women, athletes, mobile and sedentary workers, the elderly, vegetarians, vegans, etc.) wishing to make new culinary discoveries. What's more, thanks to the different types of flavonoids and powerful antioxidants they contain, cranberries help neutralize the body's own free radicals(1). This helps reduce the incidence of bacterial infections (ulcers, cavities, periodontitis) and prevent the onset of cardiovascular disease and other age-related illnesses. What's more, the polyphenols it contains inhibit the breakdown of bad cholesterol (LDL)(2) and protect the heart (arteriosclerosis)(3).
- people suffering from urinary tract infections: cranberries have an anti-adhesive effect thanks to their unique type A proanthocyanidins, which limit the attachment of pathogenic bacteria (prevention of urinary tract infections)(4).
Recommendations
Dried Cranberry should be part of a varied, balanced diet.
However, this product is not recommended in case of :
- low-calorie diets,
- diabetic diets,
- hypertriglyceridemia (fructose sensitivity),
- renal insufficiency,
- intestinal disorders.
