Piment d'Espelette PDO, or in Basque Ezpeletako biperra, is a pepper that gives a touch of heat in the mouth. As heat doesn't mean "biting", piment d'espelette is a mild pepper, the opposite of cayenne.
These flowery, gourmet aromatic notes will enhance your culinary preparations.

Organic chillies are planted in May-June on INAO-approved plots in the PDO zone.
The land is prepared by ploughing and rows of black tarpaulins are laid over the plots.
The plants are planted at precise distances from each other, as indicated in the specifications.
To help the young plants reach maturity, we weed each plant by hand. When they reach a height of around 30cm, the plants are staked by hand.
Flowering starts in June and lasts until October.
The fruit reaches full size (7-14cm) in 3 weeks. Green from the moment of fertilization, the fruit turns bright red.
Then it's time to harvest!
