From June to October, our Cèpes de Bordeaux(Boletus Edulis) are picked ripe in the forests of the Caucasus, made up of oak, beech and black pine. These organic mushrooms are perfect for adding to pasta dishes or risottos, or for use in sauces with juniper berries or orange zest, for example. Use: rinse and quickly rehydrate in water or directly in stock at 40/50°C.

In France, two species are legally entitled to the commercial name "cèpe": the Bordeaux cep (Boletus edulis) and the black-headed cep (Boletus aereus). It is therefore essential to choose one of these two varieties, and not a summer or pine cep.

These mushrooms are incredibly flavorful and are distinguished from other boletus by their very firm, always very white flesh.

The most famous boletus, boletus eludis, grows in forests.

The Bordeaux ceps you buy from us are kiln-dried at 45°C. You'll find no debris or other impurities, just mushroom slices.

Très odorants, nos cècome from the Balkans, and more specifically from southern Slovenia.
