Persian blue salt crystals for mills

This salt is extracted from an ancient cave dating back over 250 million years, located in the province of Semman in northern Persia. Its blue color is due to the presence of sylvine, a variant of crystalline potassium chloride. Persian blue salt is a rock salt with a subtle, complex taste.
This salt has a high potassium content, which helps the body regulate water balance, acidity levels and blood pressure. Also rich in iron and calcium.

IN THE KITCHEN: It enhances all dishes and is often used as a finishing salt, sprinkled over dishes just before serving. Delicious with foie gras.
