Neither sea salt nor earth salt, but highly salty river salt from the hot springs of the Andes, at 3500m altitude. It's also known as Andean pink salt or Inca salt.
Maras salt is neither sea salt nor earth salt, but salt from salt pans clinging to the mountainside (3300m altitude) 50km from Cusco. It's a unique, timeless place. Two thousand years ago, these salt pans supplied almost the entire country, but since sea salt is now cheaper to extract, Maras salt extraction has dropped considerably (150 tons per year).
COOKING: as a fleur de sel on red or white meats at the end of cooking.
