A sublime blend of organic ground coffee and spices (green cardamom, cinnamon, aniseed, etc.) that lets you discover or rediscover the Nubian coffee available in Aswan and Abu Simbel. A journey in itself.
Nubian coffee is one of the many variations of "Turkish-style" coffee found in the eastern and southern Mediterranean basin, as well as in certain parts of Africa. You can try this blend in an espresso, but it's relatively strong and is best brewed Turkish-style or in an Italian coffeemaker (slow brews such as Chemex or V60 also work well).
Recipe:
15-20g Nubian coffee blend with organic spices
30cl water
2 sugars (or more if you like it like the Egyptians call it "zeyâda"), I prefer "mazbût" (medium sweet).
Bring the water to the boil and add the coffee, then the sugar, stirring with a wooden spatula. A foam will form, so turn off the heat before the coffee starts to boil.
Leave to stand for 5 minutes, until the pomace has settled, then serve in cups (filtering if possible - metal mesh is sufficient).
