Cloves, long the monopoly of Portuguese and Dutch companies, grow mainly by the sea. Introduced to Madagascar and Zanzibar in the 18th century, these two places are now major producers. Often used in Europe in onion stews, cloves are also a wonderful spice in chai tea and meat and vegetable broths. Our cloves have beautiful heads, the sign of a perfect clove with an intense flowery fragrance.

And as always, our spices are ground to order for freshness and flavor, one of the hallmarks of Place des Epices.

Cloves are one of the best-known spices (along with pepper). pepper) whose distinctive scent will probably remind you of the dentist. A powerful antiseptic and anti-inflammatory, cloves are generally used whole, but ground cloves can be used in certain blends. Squeezed into an onion and placed in a stew, its favor is irreplaceable.

Good cloves have a nice, well-presented floral growth, as opposed to all-black, burnt cloves that actually look like cloves. Good ground cloves have a bewitchingly sweet, chocolatey scent, somewhere between cinnamon, pepper and fennel, a far cry from the smell you'd find at the dentist's (eugenol, the active ingredient).

Native to the Moluccan archipelago (like many other spices brought back by Europeans in the 16th century), 95% of the world's clove production is used to make Indonesian cigarettes, the famous kreteks.
