Fenugreek is a fabaceae, an annual herbaceous plant 60cm tall. It has a unique fragrance, also called trigonelle or senegrain, reminiscent of curries and a blend of caramel and beef broth. Overheated, it becomes slightly bitter, reminiscent of celery.

An aromatic plant in the clover and tamarind family, fenugreek has a strong smell of curry and celery, and is slightly bitter and astringent. It is used in a number of blends, such as sambar and curries, as well as in ras-el-Hanout.

Fenugreek is a very rich spice containing phosphorus, iron, sulfur, nicotinic acid, alkaloids, saponins (appetite-stimulating properties), flavonoids, carbohydrates, vitamins A, B1, C, magnesium, calcium, lecithin, protein (30%).
