Originally from the Orient, cumin can be found in Egypt, in the tombs of the Pharaohs in the Valley of the Kings high above Luxor. The Egyptians knew it for its medicinal virtues and sprinkled it around their tombs. In the Middle Ages, cumin was thought to prevent meat from rotting - not entirely untrue, but not entirely true either! The famous Kamun (in Arabic) is obtained by drying the stalks of this herbaceous member of the Umbelliferae family, then recovering the fruit by threshing, and the cumin seed is born.

Widely used in cooking, it must be used sparingly, as its main component, cuminaldehyde, is extremely fragrant. Present in ras el hanout and Indian curries, it is also used in the Malay curry of the seven seas.

Cumin has great digestive properties, as it stimulates digestive enzymes (digestive fire) and thus aids assimilation of ingested food and, of course, minerals. A known anti-inflammatory, it also soothes upset stomachs. It's an alternative to baking soda, which you put in cabbage or chickpeas.

It's also an excellent appetite regulator, helping those wishing to go on a diet without too much deprivation: make a herbal tea of one glass of water to one spoonful of powdered cumin a day, which you can combine with cardamom and fennel if required.
