Safflower oil is relatively unknown; very fluid and a beautiful yellow color, it is used cold in salads. Its very pronounced fragrance and flavor are similar to sunflower oil. Its nutty taste will surprise you as an accompaniment to cheeses or salads. We do not recommend using it hot because of its high concentration of polyunsaturated fatty acids.
