Introduced to Louisiana by the Acadians, Cajun cuisine is French in origin, with some Iberian and African influences. As a reminder, Acadia is that geographical area in the northeastern United States.
Cajun Bio is a multicultural blend, which, along with our Xawaash and Italian blends, is certainly the most versatile of all blends.
Wild green oregano from Greece*, thyme*, onion*, smoked paprika from Murcia*, garlic*, white mustard*, Kerala black pepper*, Chipotle pepper*, whole bay leaf and cumin* make up the Cajun blend. Yes, it's a bit spicy, but it's formidable in terms of culinary harmony; you know the saying "to try it is to adopt it"? well, Cajun blend is one of those terribly addictive blends, just like vadouvan or Italian blend. We only use mild chillies (less than 10,000 on the Scoville scale), which means that a wide audience can use them, some on a daily basis. And as always, I'm repeating myself but it's important, we only use seeds from the latest harvest to assemble and make our blends (with the exception of the chipotle pepper, which we order already ground but to order).
