Nubian coffee is one of the many variants of Turkish-style coffee found in the eastern and southern Mediterranean basin, as well as in parts of Africa. You can try using this blend as an espresso, but it's relatively strong and really lends itself to a Turkish-style infusion in an Italian or piston coffeemaker (slow brews such as Chemex or V60 also work well).
Made with green cardamom, cinnamon, fennel, green anise and other organic spices, the blend of Nubian spices combined with coffee is a new way to discover coffee and relive those moments spent on the banks of the Nile on the Sudanese border between Abu Simbel and Aswan.

Recipe:
1cc organic Nubian spice blend
15-20g ground coffee
30cl water
2 sugars (or more if you like it like the Egyptians call it "zeyâda") I prefer it "mazbût" (moderately sweet)
Turkish coffee" method: Bring the water to the boil in a saucepan and add the coffee mixed with the spices and sugar, stirring with a wooden spatula. The foam will rise, so turn off the heat to prevent the coffee from boiling.
Leave to stand for 5′ until the pomace has settled, then serve in cups (straining if possible - metal mesh is sufficient).
