Cubeb pepper(piper cubeba) is a little stronger than black pepper(piper nigrum) in taste, but it stings less, and is a little closer to clove, as evidenced by its freshness on the palate. Don't hesitate to use it every day, and dare to use it on a chocolate mousse.
Fruit of a climbing perennial plant in the Piperaceae family, native to the Indonesian islands of Java and Sumatra. It is also grown in Sri Lanka, often in the midst of tea plantations, where it thrives.
The berries are harvested green before ripening, then sun-dried to give them their dark color.
The use of cubeb, whose scientific name is Piper cubeba, has been known since ancient times in China, where it was used for its benefits in treating respiratory problems. It is also known as cubeb pepper, embèbe pepper, tailed pepper (not to be confused with wild Madagascar pepper) or Kissi pepper.
