Introducing the first organic pumpkin spice blend! Many of you have been asking for it, so here it is; get out your Halloween masks and pumpkins the moment is near 😉

What is pumpkin spice?

It's definitely an American blend, no doubt about it, naming a spice blend "pumpkin spice" / "Epices de citrouille" where there isn't any! not even an ounce 😉 So yes, the phenomenon arrived in France a few years ago, and it looks like the contagion is catching on, with signs blooming at the entrances to "pumpkin spice" coffee shops. Starbuck's, which was one of the first to make a latte with this spice blend, generates $100 million in revenue! From lattes and cakes to butter, hummus and pumpkin spice-based pasta sauces, it's all about generating business... ahh America.

To cut a long story short, pumpkin spice masala is made with a good portion of cinnamon (many people use cassia, which is cheaper but not as good), ginger, nutmeg (we add mace), a little clove, and I recently read an enormity... 4-spice masala! I'll leave it to spice lovers to see the enormity...

Why pumpkin spice?

Simply because it's originally a pie, a pumpkin cake flavored with spices.

Preparing the pumpkin spice latte

500 g pumpkin or salsify
3 tsp organic pumpkin spice mix
1 /2 organic vanilla stick or extract
4 tbsp. maple syrup
80 g whole cane sugar
100 ml water
1 to 2 espressos
120 ml milk

Cut the pumpkin into small pieces and spread them on a baking sheet, covering them with the spice mix, vanilla, maple syrup and sugar. Wrap the mixture tightly around the pieces.

Place a sheet of aluminum foil over the mixture and bake at 180°C for 45 minutes.

Once cooled, place in a blender, add the water and blend until the desired velouté is obtained.

Pour one or two espressos into a tall glass or mug, and add 1 to 2 tablespoons of pumpkin velouté.

Froth the milk and pour into the mug. Enjoy your first pumpkin spice latte.
