Our organic five-spice blend is made from the traditional Chinese blend of cloves, fennel, Sechuan pepper and green anise, minus cassia (Chinese cinnamon, much less aromatic than Sri Lankan cinnamon), which we replace with genuine Ceylon (Sri Lankan) cinnamon pipe for added aroma.
And as always, our spices are toasted and ground to order for added freshness and flavor, one of the hallmarks of Place des Epices.
The Chinese five-fragrance blend, or more commonly known as five-spice, is a rather astonishing recipe because it brings together the five major elements of taste: acid, bitter, sweet, pungent and salty. The "original" recipe consists of fennel, cloves, cinnamon,green anise and Sichuan pepper. So, is this a real intention, or has a Chinese chef realized that it's impossible to miss a dish with this blend? The story doesn't tell.
What's certain is that few blends scrupulously respect this recipe, and you'll often find five-spice blends containing... seven or even eight spices, often including ginger and nutmeg.
Avoid confusing it with the 4-spice blend which is made up of ginger, cinnamon, cloves and nutmeg.
