Organic Dukkah is a blend of nuts, seeds and toasted spices. It contains almond and hazelnut combined with coriander, cumin, a little pepper and paprika, and a pinch of fleur de sel (0.7%). It's a highly addictive blend, just like vadouvan or zaatar.

And as always, our spices are toasted and ground to order for added freshness and flavor, one of the hallmarks of Place des Epices.

Dukkah (or Douka) recipes are numerous and vary according to country and region of origin. Each family has its own recipe, which is true of most spice blends, but even more so of Dukkah. Originating in the Middle East, particularly Egypt, it is traditionally eaten on bread dipped in olive oil. However, it can be used in a wide variety of ways, and you'll soon realize that it goes well with many dishes, hot or cold, vegetarian or otherwise.

Some spice blends are so closely associated with their place of origin that they are practically synonymous with their cuisine: jerk seasoning and Jamaica, garam masala and northern India, yellow curry has become the number one international blend.

But some blends transcend the boundary between regional speciality and internationally appreciated product. Dukkah (pronounced Douka), an Egyptian blend of nuts, seeds and spices, is an excellent example.

Dukkah takes its name from the Egyptian Arabic word for "to crush" or "to pound", which is precisely how it is made. Recipes vary, but generally consist of cumin, coriander, sesame seeds, salt, dried herbs and nuts (especially peanuts, which are exceptional in Egypt). The ingredients are placed in a mortar and ground into a coarse mixture, releasing aromatics in the process.

Rich in protein, Dukkah was originally the dish of the people, the dish of the poor. In the 1836 book " Manners and customs of the moderns egyptians ", we find a reference to it: " A meal is often made (by those who cannot afford luxuries) of bread and a mixture called 'Dukkah' [...]" a mixture of salt and pepper with thyme (zaatar) or wild marjoram or mint, cumin and other ingredients such as cinnamon, coriander, sesame or chickpeas.

Often served for breakfast or as a snack, pieces of bread are soaked in olive oil before being dipped in dukkah.

Dukkah can also add fabulous texture and complexity to yoghurt, hummus or baba ganoush), enhance salads and vegetables, or even be used as a rub for meat or fish. You can also simply eat dukkah on its own as an aperitif or afternoon snack.
