Fenugreek is a fabaceae, an annual herbaceous plant 60cm tall. It has a unique fragrance, also called trigonelle or senegrain, reminiscent of curry and mother caramel and beef broth. In powder form, it should not be cooked dry or very lightly, otherwise it becomes very bitter.
An aromatic plant in the clover and tamarind family, fenugreek has a strong smell of curry and celery. Slightly bitter and astringent, it is an ingredient in many blends such as sambar, ras el Hanout and curries.
