Chicken tagine with almonds, prunes and argan oil
Ingredients:
1 whole chicken, cut into pieces
1 onion, finely chopped
2 garlic cloves, crushed
2 tablespoons edible argan oil
1 teaspoon ground ginger
1 teaspoon turmeric
1 teaspoon cinnamon
1 tablespoon honey
1/2 cup blanched almonds
1/2 cup pitted prunes
1/2 preserved lemon, cut into quarters
Salt and pepper to taste
A few sprigs of fresh coriander for garnish
Instructions :
In a tajine or large saucepan, sauté the onion in the argan oil until golden.
Add the chicken pieces and crushed garlic. Brown on all sides.
Sprinkle ginger, turmeric and cinnamon over the chicken. Season to taste with salt and pepper.
Pour a cup of water into the tagine, cover and simmer over low heat for about 30 minutes, until the chicken is tender.
Add the almonds, prunes and preserved lemon. Drizzle with honey.
Simmer for a further 15-20 minutes, ensuring that the sauce thickens slightly.
Before serving, garnish the tagine with sprigs of fresh coriander.
Serve this delicious chicken tagine with couscous semolina for an authentic Moroccan taste experience.
