A "gourmet" oil (like hazelnut oil), our oil made from French walnuts is a great source of Omega-6 unsaturated fatty acids. Walnut oil is perfect for seasoning, but should not be used for cooking or frying. With an endive salad with Roquefort, it's a delight, but you can also use it simply as a finishing oil.
