What is Yuzu?

Organic Japanese yuzu juice is a precious ingredient in cooking and baking, extracted from the yuzu citrus fruit grown in the Shiromi mountains in the Kyushu region.
This juice (Japanese lemon juice) is obtained from organically grown, environmentally-friendly fruit.
Yuzu, a bright yellow citrus fruit, is renowned for its complex aroma and unique flavor, combining notes of tangerine, citron and grapefruit.
Thanks to ideal climatic conditions, including significant temperature variations and constant morning fog, yuzu from this region develops a pronounced acidity and unrivalled aromatic intensity.

Culinary and pastry uses of Yuzu juice :

Marinades and sauces:
Organic yuzu juice is ideal for preparing marinades for white meats, poultry, fish and seafood.
Its tangy flavor brings an inimitable freshness to dishes, enhancing the aromas of basic ingredients.
In sauces and vinaigrettes, yuzu replaces lemon for a more complex, exotic flavor profile. It is commonly used in ponzu sauce and other culinary preparations requiring a touch of balanced acidity.

Tartars, ceviches and carpaccios:
For raw fish dishes like tartares, ceviches or carpaccios, yuzu juice adds a unique lemony dimension, perfectly balancing marine flavors with a refined hint of acidity.

Desserts and pastries:
In patisserie, organic yuzu juice lends itself to numerous creations: creams, mousses, ganaches, sabayons and other desserts where a lemony note can provide a pleasant contrast with sugar.
It is also used to prepare sorbets and ice creams, offering intense freshness and an original flavor.
In classic pastries such as lemon tarts, financiers or madeleines, yuzu replaces traditional lemon for a more sophisticated, exotic touch.

Preservation and shelf life:
Organic yuzu juice is sensitive to oxidation. To preserve its organoleptic qualities, we recommend storing it in a cool, dark place. After opening, it should be refrigerated and consumed within 6 to 8 weeks for optimum quality.

Benefits of organic Yuzu juice :

100% pure organic yuzu juice, no preservatives or additives
Versatile ingredient, ideal for sweet and savory recipes
Intense, complex flavor, perfect for refined culinary creations
