What is organic maceron (also known as swamp pepper)?

Organic maceron, a rare spice also known as marsh pepper, is an ancient aromatic plant, once widely used in cooking before being supplanted by black pepper. Grown according to organic farming principles, maceron is distinguished by its seeds, which once dried, offer a spicy, peppery flavor, reminiscent of a subtle blend between black pepper and celery. This condiment is much appreciated by chefs for its unique flavor, which adds aromatic depth to sweet and savory dishes.

Characteristics of organic maceron :

Ingredient: 100% organic maceron seeds (Smyrnium olusatrum)
Appearance: Black or dark brown seeds, slightly wrinkled.
Taste: Peppery, slightly spicy, with notes of celery and aniseed.
Aroma: Spicy, with a slight herbaceous note reminiscent of parsley and celery
Texture : Crunchy to grind, releasing a spicy freshness

Culinary and pastry uses :

Seasoning and marinades:
