Well-known alongside its sister, white mustard (blond or yellow), in so-called "old-fashioned" mustard, it is less well known for its detoxifying properties. In herbal medicine, brown mustard seed "cleanses" the body thanks to the sinigrin it contains. When crushed (i.e., when the mustard seed is ground), this molecule is broken down by an enzyme into mustard oil, which gives mustard, but also wasabi(Eutrema japonicum) and horseradish(Armoracia rusticana), their pungent taste. White (or blond) mustard is less pungent than brown because it contains a slightly different molecule.
