Toasted coconut is a staple ingredient in Asian, African, Indian, Indonesian and South American cuisine.

History
No one knows exactly where the coconut palm (Cocos nucifera) comes from, but it is generally agreed that it probably originated in Southeast Asia (Malaysia, Melanesia, Indonesia...). The coconut palm, a member of the palm family (Palmacea), which traditionally grew along beaches, is thought to have spread, its nuts sailing across the ocean to coastal regions (a nut can float for several months without germinating) before taking root in the sandy soil of tropical beaches. Sailors also helped spread this "Tree of Life" throughout the Tropics, carrying the fruit on their ships.
Also known as the "Jewel of the Tropics", the coconut offered entire civilizations a means of subsistence. Its fruit, the coconut, contains a sweet nectar, coconut water (the liquid of the unripe fruit) and, when ripe, provides the pulp of its kernel (copra or coconut kernel).
In the 14th century, the Italian Marco Polo introduced Europeans to this fruit, which would later become popular in North America.
Botanically speaking, the coconut is not a nut but a drupe (a fleshy fruit with a stone). The Slaty Coconut comes from the Philippines. Tender and crunchy, it will enhance the flavor of your dishes.
Properties
Dried coconut pulp should be consumed in moderate quantities due to its high lipid content. It differs from fresh pulp in its water content, which is obviously much lower, and in its higher carbohydrate and lipid (saturated fatty acid) content. The result is a much higher energy value: around 600 kcalories (2500 kJoules) per 100 g.
