It starts with the selection of the best sesame seeds to guarantee optimum freshness and flavor.

The sesame seeds are then slowly roasted to release their delicious aroma, while preserving their natural texture and color. This crucial step in the manufacturing process gives artisanal tahini its deep, rich flavor, as well as a light nutty note.

and once torrefied?

After roasting, the sesame seeds are carefully ground on a stone grinder to create a smooth paste.

A few simple recipes using tahini:

Classic hummus :
1 can chickpeas (400 g), drained and rinsed
3 tablespoons tahini
2 cloves garlic, minced
Juice of 2 lemons
2 tablespoons olive oil
salt and pepper

Blend all ingredients in a blender until smooth.
Season to taste.
Serve with raw vegetables, pita bread or crackers.

Cucumber salad with tahini :
2 cucumbers, diced
2 tablespoons tahini
Juice of 1 lemon
2 tablespoons olive oil
2 cloves garlic, minced
salt and pepper

Mix the tahini, lemon juice, olive oil, garlic, salt and pepper in a bowl to prepare the vinaigrette.
Pour the dressing over the diced cucumber and toss well.
Refrigerate for about 30 minutes before serving.

Chicken with tahini :
4 chicken breasts
1/2 cup tahini
Juice of 1 lemon
2 tablespoons honey
2 tablespoons soy sauce
2 cloves garlic, minced
salt and pepper

Mix the tahini, lemon juice, honey, soy sauce, garlic, salt and pepper in a bowl to prepare the marinade.
Brush the chicken breasts with the marinade and leave to marinate for at least 30 minutes.
Bake or pan-fry the chicken until cooked through. Serve with remaining marinade.

Chocolate tahini cake :
1/2 cup tahini
1/2 cup sugar
2 eggs
1 teaspoon vanilla seeds
1/4 cup cocoa powder
1/4 teaspoon salt

Preheat the oven to 180°C and grease a cake tin.
Mix the tahini, sugar, eggs, vanilla, cocoa powder and salt in a bowl.
Pour the batter into the tin and bake for around 20-25 minutes, or until a toothpick comes out clean.
Leave to cool before serving.
