Toasted coconut is a staple ingredient in Asian, African, Indian, Indonesian and South American cuisine.
Coconut can be sprinkled in the morning on your mueslis or cereals, and is a good ally for making homemade cereal or chocolate bars.

Very rich in dietary fiber, coconut in its dried form is overflowing with copper, manganese, iron and magnesium. It's an excellent appetite suppressant and helps improve your daily health by eating it for breakfast with cashews, or as an afternoon snack.

Historique
Nul ne connait avec exactitude, la provenance du cocotier (Cocos nucifera), mais l’on s’accorde à dire qu’il serait probablement originaire du Sud-Est asiatique (Malaisie, Mélanésie, Indonésie…). Le cocotier, de la famille des palmiers (Palmacea), poussant traditionnellement en bordure de plage, se serait disséminé, ses noix navigant sur l’Océan vers les régions côtières (une noix peut flotter plusieurs mois sans germer) avant de prendre racine dans le sol sableux des plages tropicales. Les marins ont, par ailleurs, aidé à diffuser cet «Arbre de Vie» dans les régions des Tropiques, emportant les fruits sur leur navire.
Egalement dénommé «Joyau des Tropiques», le cocotier offrit à des civilisations entières, la possibilité de subsister. En effet son fruit, la noix de coco, renferme un doux nectar, l’eau de coco (liquide du fruit non mature) et fournit, une fois arrivée à maturité, la pulpe de son noyau (coprah ou amande de noix de coco).
Au XIVème siècle, l’Italien Marco Polo fit connaitre ce fruit aux Européens, fruit qui deviendra populaire plus tardivement en Amérique du Nord.
En botanique, la noix de coco n’est pas une noix mais une drupe (fruit charnu à noyau). La Noix de Coco en Lamelle vient des Philippines. Tendre et croquante, elle assurera la saveur de vos plats.

Properties
Dried coconut pulp should be consumed in moderate quantities due to its high lipid content. It differs from fresh pulp in its water content, which is obviously much lower, and in its higher carbohydrate and lipid (saturated fatty acid) content. The result is a much higher energy value: around 600 kcalories (2500 kJoules) per 100 g.

A source of selenium, it also provides magnesium, potassium and zinc, as well as vitamins B5 and B6, which are essential for cell renewal and for the body's overall proper functioning.

- the elderly: who suffer from intestinal sluggishness, its high fiber content gently stimulates transit;

Consumption
Sliced, it will add a touch of originality to your aperitifs, on its own or withalmonds, hazelnuts, macadamias, grapes, apricots or other dried fruits...
It can be incorporated into many dishes:
- sweet: coconut rocks or pearls, flans, entremets, creams, cakes, tarts, muffins, brownies, compotes, pancakes, waffles, brioches... Coconut goes divinely well with chocolate!
- Savoury: meats (especially poultry - coconut curry chicken, stews, blanquettes or white meat dishes cooked in sauce), curries and sauces, fish or seafood, rice, pasta...
Gourmet idea: Slightly warm banana, hot chocolate and toasted, shredded or grated coconut. Enjoy!

Recommendations
Coconut should be part of a varied, balanced diet.
However, this product is not recommended in the event of :
- diabetic diets,
- hypertriglyceridemia (fructose sensitivity),
- renal insufficiency,
- intestinal disorders.
