Here's one of my favorite rubs, the chipotle pepper rub. Chipotle, if you're not familiar with it, is a smoky South American chili pepper that has the strength of espelette pepper. So this is a slightly strong rub which, combined with the very aromatic cumin, Tellicherry pepper and lime zest, will awaken your grilled beef or game.
Composition:
Chipotle* jalapeno peppers, cumin*, Tellicherry pepper*, lime zest*, rapadura sugar*, salt. *Organically grown
Preparation:
rub the mixture well into the meat on both sides, leaving it to soak in the mixture for one or two hours (you can test this over several hours or even days in the fridge).
The barbecue:
As a friend of mine in Dubrovnik says, "no oxygen, no flame", so the closer the meat is to the embers, the less likely it is to catch fire. My barbecue is 7 centimetres deep, entirely taken up by the embers, with cast-iron grates covering it. It's very rare for flames to form, and when they do they don't stay alive for long - no oxygen, no flame (cqfd).
the trick:
Sprinkle the meat with the juice of half a lime.
