A large black seed, the Tonka bean comes from the Brazilian teak tree. A spice from South America , organic Tonka beans are increasingly used in gastronomy, particularly in pastries, where they blend wonderfully with chocolate and creams.

Dipteryx odorata (Cayenne guaiac or Guiana tupi) is the tropical tree from which Tonka beans originate. Reaching heights of up to 30 meters, this tree produces seeds about 2cm long, ovoid, very dark and highly fragrant (the seeds are rich in coumarin).

Coumarin, a natural aromatic substance with a scent somewhere between vanilla and freshalmond, is widely used in perfumery, notably in Guerlain's Shalimar.

The fruits (which resemble almonds in size) fall to the ground when ripe at the end of the year. They are not harvested until 5 or 6 months later, in June. Peeled and dried in the shade, they are then placed in alcohol for half a day. Once the fruit is dry again, it becomes covered with coumarin, which flushes to the surface (like vanillin).

Tonka beans are used in cooking and pastry-making, and bartenders grate them as a finishing touch for cocktails such as Gin Tonic. Madeleines and chocolate love this bean, and you'll be glad you did.
