Madras curry (Southern curry) is best known for its historic reputation, but unfortunately the blend sold in supermarkets is often made with poor-quality spices that have been ground for too long.

Yellow curry from Jaipur is a yellow curry, unlike our other curries, including Andaman Bay Thai green curry and Chiang Mai red curry.

Our organic curry contains no less than 12 spices, all organically grown and hand-harvested according to age-old local traditions.
No overexploitation of labor, but a genuine blend that respects the earth and its people.

Curry is a term that defines a blend of spices, but the word doesn't exist in Tamil, as Kari means stew. In India, the word masala is used instead, meaning a mixture. Garam Masala is therefore a "garam" (hot) blend.

Unlike Indian curries, our blends contain no chillies (or only the very rare Espelette or Aleppo chillies). Europeans aren't used to the strength of chillies, and quite frankly I've always found that they detract from the fragrance and taste of the blends.
