Rosemary, Oregano, Savory and Thyme are the official ingredients of the Herbes de Provence blend. They're the perfect accompaniment to summer grills, sauces and stews. Basil, parsley and even bay leaf are sometimes added, but for the true Provencal, the real recipe is ours.
The "official" blend of herbes de Provence, roughly a quarter each ofrosemary, savory, oregano and thyme, has suffered and continues to suffer from an ultimately uncontrolled appellation. A few years ago, the Comité des Plantes à Parfum Aromatiques et Médicinales introduced a red label, defined as follows: "The "Herbes de Provence Label Rouge" product, as defined in the specifications, guarantees high organoleptic qualities, a fixed recipe and composition, and the expected traceability and food safety. Certified Herbes de Provence is a blend of dried thyme, rosemary, savory and oregano, mixed in the following proportions: 19% thyme, 27% rosemary, 27% savory, 27% oregano " .
Our Herbes de Provence Bio blend is not Label Rouge certified, but complies with the above definition in every respect.
France doesn't produce enough to supply the 500 tonnes of herbs consumed every year (barely 5%), so it's logical that some of these aromatic plants come from European Union countries or Morocco.
Our organic oregano can come from the following countries: France, Bulgaria, Poland or Portugal
Our organic savory from : France, Spain, Albania or Portugal
Our organic rosemary comes from Spain
Our organic thyme from : Spain, France, Albania, Morocco, Portugal or Germany
The most important thing is that the plants are grown in compliance with organic standards, which is the case for our EcoCERT-certified company.
There are sometimes as many as 10 aromatic herbs in herbes de Provence: basil, chives, marjoram, wild thyme, tarragon, fennel, lovage, sage, laurel, you name it, and soon the blend of herbes de Provence will resemble ras-el-hanout 😉
