Recipe idea:

Roast Chicken with Nigella Oil, Lemon and Moroccan Spices

Ingredients:

1 whole chicken (about 1.5 kg)
3 tablespoons black cumin oil
Juice of 2 lemons
2 teaspoons ground cumin
2 teaspoons ground coriander
1 teaspoon paprika
1 teaspoon turmeric
4 garlic cloves, finely chopped
Salt and pepper to taste
Lemon wedges for decoration
A few sprigs of fresh coriander for garnish

Instructions :

Preheat oven to 200°C.

In a bowl, combine the nigella oil, lemon juice, cumin, coriander, paprika, turmeric, minced garlic, salt and pepper to create the marinade.

Place the chicken in an ovenproof dish. Brush generously with the marinade, making sure to coat the skin and inside of the chicken. Reserve a small amount of marinade for the end.

Marinate the chicken for at least 30 minutes, ideally for a few hours in the fridge to allow the flavours to penetrate.

Once marinated, place the chicken in the preheated oven and roast for about 1 hour, basting occasionally with the remaining marinade, until golden brown and cooked inside.

Before serving, garnish the dish with lemon wedges and sprigs of fresh coriander.
