August 26 is raksha bandhan in India, the festival of brotherhood between brothers and sisters, or between friends as brother and sister. A small cord that the sister ties to her brother's wrist, asking for his protection, represents this bond. Rakhi Day is a special day in India, and even more so this year, when floods swept through Kerala in the south of the country. It takes place at the time of the full moon, starting at the end of July. Desserts can be brought to fraternal gatherings, and I suggest Sandesh with dried fruit, a delicious curd sweetened with dried fruit.

- 1 liter whole milk or soy milk
- 1/2 cc ground cardamom
- 1,5 tbsp pistachios
- 3 tbsp freshly squeezed lemon
- 1,5 tbsp almonds
- 100 ml honey or maple syrup

- Bring the milk to the boil in a saucepan, then lower the heat and add the squeezed lemon. Stir well until the milk curdles.
- Filter the milk and curds through a cloth or fine sieve.
- Keep the curd in the colander or cloth and leave to drain for 30 minutes.
- Add honey or maple syrup and blend vigorously until smooth.
- Place over medium heat and stir for 5 minutes, adding the ground cardamom, coarsely crushed almonds and pistachios.
- Leave to rest, roll out into a two- to three-centimeter-thick square and cut into smaller squares.
- Enjoy cold or lukewarm
