Grown in Sri Lanka (Ceylon), Rasavat pepper is one of the great peppers; its ripe fruit notes and clean flavor are excellent for herb sauces, vegetables and pies.
In Sri Lankan Sinhalese, Rasavat means "delicious", and it's this adjective that defines Rasavat black pepper, fresh and intense. It's a great everyday pepper, just like Tanzanian black pepper .
Pepper harvesting in Sri Lanka (Ceylon) takes place later than in India on the south-west coast, from early June. Pepper vines grow on tall trees that act as natural supports, and the harvested seeds are then sun-dried for several weeks, ripening in July.
Pepper production in Sri Lanka represents around 6% of world production (3 times less than in India).
